Ingredients

all-purpose flour
1/4 teaspoon
instant yeast
2 teaspoons
kosher salt

cornmeal or wheat bran
Instructions

Add water, stir until blended, and cover.

Let dough rest for 12 to 18 hours at room temperature.

Check bubbles on dough; flour work surface.

Shape dough into a ball and place on floured towel.

Cover and let rise for 2 hours.

Preheat oven to 450 degrees; place pot in oven.

Transfer dough to pot and cover; bake for 30 minutes.

Remove lid and bake for 15 to 30 minutes.
