fresh ginger, minced

light soy sauce
1 scant teaspoon
sherry vinegar
1/2 teaspoon

ssamjang
1 tablespoon
kochujang

1/2 cup
neutral oil
2 cups
plain white rice, cooked
3 heads
bibb lettuce, leaves separated
1 dozen
fresh oysters (optional)

Instructions

Refrigerate covered for 6 hours overnight.

Preheat oven to 300°F and cook pork for 6 hours.

Make ginger-scallion sauce, combine ingredients.

Prepare ssam sauce by mixing chili pastes and vinegar.

Prepare rice, wash lettuce, shuck oysters if using.

Increase oven to 500°F, coat pork with brown sugar and salt, bake for 10-15 minutes or until caramelized.
