Mock Apple Pie I

crushed Ritz crackers
2 teaspoons
cream of tartar
2 tablespoons
lemon juice
1 tablespoon
lemon zest
2 cups
water
2 tablespoons
butter
2 cups
white sugar
1/2 teaspoon
ground cinnamon
Instructions
STEP 1
Preheat oven to 425 degrees F.
STEP 2
Roll out half of the pastry and line a 9-inch pie plate. Place the crushed crackers in the prepared crust.
STEP 3
In a saucepan, bring water, sugar, and cream of tartar to a boil, then simmer for 15 minutes. Stir in lemon juice and zest; let cool.
STEP 4
Pour the syrup over the crackers. Dot the top with butter and sprinkle with cinnamon. Roll out remaining pastry and place over the pie. Trim, seal, and flute edges. Cut slits in the top crust to allow steam to escape.
STEP 5
Bake in the preheated oven for 30-35 minutes until the crust is crisp and golden. Let the pie cool completely before serving.
