Million Dollar Potato Casserole

condensed cream of chicken soup
1 cup
heavy whipping cream
1/2 cup
cottage cheese

cream cheese
1/2 cup
sour cream
1 1/2 tsp.

garlic powder
1 tsp.
onion powder
1 1/2 Tbsp.
fresh thyme leaves

black pepper
2 lb.
Yukon Gold potatoes
8 oz.
sharp Cheddar cheese

Instructions
STEP 1
Gather all ingredients. Preheat the oven to 350°F (175°C).
STEP 2
In a large saucepan, mix cream of chicken soup, whipping cream, cottage cheese, cream cheese, sour cream, salt, garlic powder, and onion powder over medium heat. Cook until melted, about 5 minutes. Stir in thyme and pepper.
STEP 3
Add sliced potatoes and toss to coat. Spoon half into a 9x13-inch baking dish, pressing down to spread evenly; sprinkle with 1 cup cheese. Top with remaining potato mix and liquid.
STEP 4
In a small bowl, combine crackers, butter, and remaining 1 cup cheese; sprinkle over potatoes. Cover with aluminum foil.
STEP 5
Bake for 1 hour 40 minutes until sauce thickens and potatoes are tender, removing foil after 1 hour 10 minutes.
STEP 6
Let stand for 15 minutes before serving; garnish with thyme.
