Marry Me Chicken
Ingredients
3 large
boneless skinless chicken breasts
1/4 cup
all-purpose flour
3 tablespoons
extra-virgin olive oil
3 tablespoons
unsalted butter
3 cloves
garlic, chopped
1 tablespoon
tomato paste
1/2 teaspoon
dried oregano
to taste
red-pepper flakes
1 cup
low-sodium chicken stock
1/2 to 3/4 cup
heavy cream
1/2 cup
grated Parmesan
1/3 cup
sun-dried tomatoes, sliced
to serve
fresh basil
Instructions
STEP 1
Slice chicken breasts into 6 cutlets.
STEP 2
Coat cutlets in flour on a plate.
STEP 3
Heat oil in a pan, add butter, then cook cutlets until golden.
STEP 4
Reduce heat, add garlic, then stir in tomato paste and seasonings.
STEP 5
Simmer chicken stock in the pan until reduced by half.
STEP 6
Stir in cream, Parmesan, and sun-dried tomatoes; season.
STEP 7
Re-warm chicken in the sauce, garnish with basil.
