Lobster Bisque
Ingredients
2 lobsters
Lobster
1 cup
onion, chopped
1 cup
carrots, diced
1 cup
celery, chopped
2 cloves
garlic, minced
2 tbsp
tomato paste
1/2 cup
brandy
4 cups
seafood stock
1 cup
heavy cream
1 tsp
salt
1/2 tsp
pepper
Instructions
STEP 1
Boil lobsters in salted water.
STEP 2
Remove meat and reserve shells.
STEP 3
Sauté onion, carrots, and celery.
STEP 4
Add garlic, tomato paste, and shells.
STEP 5
Pour in brandy and simmer for flavor.
STEP 6
Add stock and simmer for 30 minutes.
STEP 7
Strain liquid and return to pot.
STEP 8
Stir in cream and season to taste.
