Loaded Sweet Potato Skins

Sweet potatoes

Black beans

Cherry tomatoes

Chipotle

Cut the sweet potatoes in half lengthwise and scoop out some of the flesh, leaving a thin layer of potato on the skin.

Brush the skins with olive oil and place them on a baking tray. Bake for 20-25 minutes until crispy.

In a bowl, mix the mashed sweet potato flesh with black beans, chopped cherry tomatoes, chipotle, miso, and coriander.

Fill the crispy skins with the mixture and return to the oven for another 10 minutes.

Serve topped with tahini coconut yogurt and homemade guacamole.
