Lemony White Bean Soup With Turkey and Greens
Ingredients
3 tablespoons
olive oil
1 large
onion, diced
1 large
carrot, diced
1 bunch
sturdy greens
1 tablespoon
tomato paste
3/4 teaspoon
ground cumin
1/8 teaspoon
red-pepper flakes
1/2 pound
ground turkey
3
garlic cloves, minced
1 tablespoon
fresh ginger, grated
1 teaspoon
kosher salt
1 quart
chicken stock
2 (15-ounce) cans
white beans, drained
1 cup
fresh, soft herbs
to taste
fresh lemon juice
Instructions
STEP 1
Heat a large pot over medium-high for a minute. Add olive oil and heat until it thins out.
STEP 2
Add diced onion and carrot; sauté until soft and brown, about 7 to 10 minutes.
STEP 3
Rinse the sturdy greens, chop into bite-sized pieces, and set aside.
STEP 4
Stir in tomato paste, cumin, and red-pepper flakes; sauté until darkened, about 1 minute.
STEP 5
Add ground turkey, minced garlic, ginger, and salt; sauté until browned, 4 to 7 minutes.
STEP 6
Add chicken stock and beans; bring to a simmer. Cook until thick and flavorful, 15 to 25 minutes.
STEP 7
Smash some beans for a thicker broth or leave whole for a brothier soup.
STEP 8
Add greens; simmer until they are soft, 5 to 10 minutes.
STEP 9
Stir in fresh herbs and lemon juice; adjust seasoning to taste. Serve with olive oil and red-pepper flakes if desired.
