Lemon-Pepper Salmon
Ingredients
2 tablespoons
butter
2 tablespoons
olive oil
16 ounces
salmon steaks
1 teaspoon
minced garlic
1 tablespoon
lemon pepper
1 teaspoon
salt
1/4 cup
water
1 cup
chopped fresh tomatoes
1 cup
chopped fresh cilantro
2 cups
boiling water
1 cup
uncooked couscous
Instructions
STEP 1
Heat butter and olive oil in a skillet.
STEP 2
Season salmon with garlic, lemon pepper and salt.
STEP 3
Pour water around salmon. Add tomatoes and cilantro.
STEP 4
Cover skillet and cook for 15 minutes.
STEP 5
In a pot, bring water to boil. Remove from heat.
STEP 6
Mix in couscous, cover and let sit for 5 minutes.
STEP 7
Serve salmon over couscous, drizzling sauce from skillet.
