Leg of Lamb With Garlic and Rosemary
Ingredients
1 (7-lb.)
semi-boneless leg of lamb
4
garlic cloves
1 Tbsp.
fine sea salt
2 Tbsp.
chopped fresh rosemary
½ tsp.
freshly ground black pepper
Neutral or extra-virgin olive oil, for pan

dry red wine or broth
kosher salt

Instructions
STEP 1
Pat the lamb dry and score its fat.
STEP 2
Pound garlic with salt, rosemary, and pepper; rub on the lamb.
STEP 3
Let the lamb stand at room temperature for 30 minutes.
STEP 4
Preheat the oven to 350°F. Roast until the thermometer reads 130°F, about 1½–1¾ hours.
STEP 5
Let it rest for 15–25 minutes.
STEP 6
Deglaze the pan with wine or broth, boil, and season before serving with the lamb.
