Lasagna Soup with Cheesy Yum
Ingredients
2 teaspoons
olive oil
1 1/2 pounds
Italian sausage
3 cups
chopped onion
4 cloves
garlic
2 teaspoons
dried oregano
1/2 teaspoon
red pepper flakes
2 tablespoons
tomato paste
6 cups
chicken stock
2 cans (15 ounce)
fire-roasted diced tomatoes
2
bay leaves
1 (8 ounce)
rotini pasta
1/2 cup
fresh basil leaves
to taste
salt
to taste
black pepper
8 ounces
ricotta cheese
1/2 cup
grated Parmesan cheese
1/4 teaspoon
salt
1 pinch
black pepper
2 cups
shredded mozzarella cheese
Instructions
STEP 1
Heat olive oil; add sausage, cook until brown.
STEP 2
Add onion; cook until softened.
STEP 3
Add garlic, oregano, red pepper flakes; cook until fragrant.
STEP 4
Stir in tomato paste; cook until brick-red.
STEP 5
Add chicken stock, diced tomatoes, bay leaves; bring to boil.
STEP 6
Reduce heat; simmer 30 minutes, then add rotini.
STEP 7
Cook rotini until tender; stir in basil, season with salt and pepper.
STEP 8
Mix ricotta, Parmesan, salt, and pepper in a bowl.
STEP 9
Serve soup with dollop of ricotta and sprinkle mozzarella.
