Whisk miso, soy sauce, gochujang, sesame oil, and pepper. In slow cooker bowl, combine pork with soy mixture (marinate overnight if desired). Cover and cook on High 6 to 7 hours or on Low 8 to 10 hours until pork is tender.

Shred pork and serve with lettuce leaves, radishes, cucumbers, green onions, and additional gochujang or Sriracha.
