Kimchi-Creamed Collard Greens
Ingredients
3 tablespoons
extra-virgin olive oil
1 large
onion, diced
1/2 pound
bacon, diced
2 pounds
collard greens
1/4 cup
sherry vinegar
1 tablespoon
sorghum syrup
2 cups
chicken stock
2 cups
water
1/2 teaspoon
crushed red pepper
Salt
Spices and Seasonings
1 cup
heavy cream
1 cup
kimchi, chopped
Instructions
STEP 1
Heat oil in a large pot.
STEP 2
Add diced onion; cook until golden, about 7 minutes.
STEP 3
Stir in diced bacon; cook until fat renders, about 10 minutes.
STEP 4
Add collards; cook until wilted, about 4 minutes.
STEP 5
Stir in vinegar; boil for 1 minute.
STEP 6
Add sorghum syrup, stock, water, red pepper, and salt; cover and cook, stirring occasionally, until collards are tender, about 90 minutes.
STEP 7
In a small saucepan, simmer cream over moderate heat until reduced by one-third, about 10 minutes.
STEP 8
Add kimchi to cream and remove from heat.
STEP 9
Stir in kimchi cream into collards; season with salt and serve.
