grated carrot
1/2 cup
raisins
1/2 cup
maple syrup
1/3 cup
olive oil
2 large
eggs
1 cup
plain Greek yogurt
1 teaspoon
vanilla extract
2 tablespoons
raw sugar
3 tablespoons
pumpkin seeds
Instructions
STEP 1
Preheat oven to 425°F (220°C). Line two muffin tins.
STEP 2
In a large bowl, whisk flour, protein powder, baking powder, cinnamon, ginger, nutmeg, baking soda, and salt. Stir in carrots and raisins.
STEP 3
In another bowl, mix maple syrup and oil. Add eggs, yogurt, and vanilla. Beat well. Combine with dry mixture until just mixed.
STEP 4
Pour batter into muffin tins. Sprinkle raw sugar and pumpkin seeds on top.
STEP 5
Bake for about 15 minutes until a toothpick comes out clean. Cool for 10 minutes before serving.
