Instructions
STEP 1
Rinse 2 cups of rice and drain.
STEP 2
In a pot, heat 1/4 cup of oil.
STEP 3
Sauté 1 chopped onion until translucent.
STEP 4
Add 2 chopped tomatoes and cook down.
STEP 5
Stir in 1 teaspoon thyme and 1 teaspoon curry powder.
STEP 6
Pour in 4 cups of broth and bring to boil.
STEP 7
Add cooked rice, mix well, reduce heat.
STEP 8
Cover and simmer for 20 minutes.
