Italian Shepherd's Pie

Ingredients

Canned tomatoes

Lentils, cooked

Vegetable broth

Instructions

In a large pan, heat some olive oil and sauté chopped onions, carrots, and celery until soft.

Add minced garlic and cook for another minute.

Stir in canned tomatoes, lentils, vegetable broth, and herbs. Simmer for 20 minutes.

Meanwhile, boil potatoes until tender, then mash with capers, basil, and a splash of olive oil.

Spread the lentil mixture in a baking dish and top with the mashed potatoes.

Bake for 25-30 minutes until golden brown on top.
