Hummus Crusted Chicken

chicken breast boneless, skinless
salt and pepper

1 cup
hummus
1/2 teaspoon
cumin
1/2 teaspoon
paprika

STEP 1
Preheat oven to 400°F and line a baking sheet with parchment paper.,
STEP 2
Pat chicken breast dry and season with salt and pepper. In a medium bowl, combine the hummus and spices together. Rub the mixture evenly all over the chicken breasts on both sides.,
STEP 3
Place the hummus covered chicken on the prepared sheet pan and bake for 15-20 minutes or until a thermometer reads 160° F internal temperature. Then broil it for 1-2 minutes, watching it carefully so it doesn’t burn.,
STEP 4
Sprinkle fresh parsley and serve with a side of couscous and veggies, if desired.
