Cut a shallow X on each tomato's bottom. Boil them until the skin peels back, 30 seconds to 1 minute.

Transfer tomatoes to ice water for 5 minutes. Peel the skin and slice into quarters.

Add tomatoes to a saucepan over low heat. Mix in salt. Simmer until thickened, about 20 to 30 minutes.
