Homemade Mac and Cheese

Ingredients

uncooked elbow macaroni
1/4 cup
salted butter
3 tablespoons
all-purpose flour
2 1/2 cups
milk
2 cups
shredded sharp Cheddar cheese
1/2 cup
finely grated Parmesan cheese
to taste
salt
to taste
ground black pepper
2 tablespoons
salted butter
1/2 cup
dry bread crumbs
1 pinch
ground paprika
Instructions

Boil a large pot of lightly salted water. Add macaroni and simmer for about 8 minutes; drain and transfer to the baking dish.

Melt 1/4 cup butter in a medium skillet over low heat. Whisk in flour until paste-like and light golden, about 3-5 minutes.

Gradually whisk in 2 1/2 cups milk, and bring to a simmer.

Stir in Cheddar and Parmesan; season with salt and pepper. Cook until cheese melts and sauce thickens, about 3-5 minutes.

Pour cheese sauce over macaroni, stir until combined.

For the topping, melt 2 tablespoons butter in a skillet, add bread crumbs, cook until browned.

Spread bread crumbs over macaroni, sprinkle with paprika.
