Combine broth, onion, celery, carrots, parsley, pepper, thyme, and bay leaf in a pot; bring to boil. Reduce heat; simmer until onion and celery soften, 10 to 15 minutes.

Stir in chicken; simmer until chicken is no longer pink, 5 to 10 minutes. Remove and discard bay leaf.

Stir in rice and lime juice; cook until heated, about 1 minute. Garnish with lime slices.
