Ham Steaks in Madeira Sauce

Madeira
1 cup
chicken stock

mushrooms, sliced

chopped shallots

English peas
1/4 cup
heavy cream
Instructions

Cook one ham steak until browned, then remove.

Cook the second ham steak and remove.

Add the first steak back, then add Madeira and cook for 1 minute.

Stir in stock, mushrooms, and shallots; cook until tender.

Remove ham and mushrooms, then add peas and cream; thicken.

Stir remaining butter and serve sauce over cut ham.
