Rub chicken cavity with rice wine and stuff with ginger, scallions, cilantro, and star anise. Brush outside with liqueur and let dry for 2 hours.
STEP 2
Truss chicken with string and wrap in cheesecloth. Tie tightly.
STEP 3
Heat salt in a pot for 10 minutes. Pour most salt into a bowl. Place chicken in the pot and cover with remaining salt. Cook for 1.5 hours on moderate heat.
STEP 4
Check doneness by brushing off salt; if juices are pink, cover and cook 15-30 more minutes.
STEP 5
Remove chicken and discard salt. Carve chicken into bite-size pieces and serve with sauces.
