Grilled Mackerel with New Potatoes and Salad
Ingredients
150 g
new potatoes
pinch
salt
2 fillets
mackerel
1 tbsp
wholegrain mustard
salt and pepper
Spices and Seasonings
1 tsp
English mustard
1 tbsp
white wine vinegar
3 tbsp
rapeseed oil
squeeze
lemon juice
2
Little Gem lettuces
Instructions
STEP 1
Bring a pan of water to boil. Add the potatoes and cook for 8-10 minutes until tender. Drain and keep warm.
STEP 2
Preheat the grill to high for the mackerel.
STEP 3
Place mackerel on the grill tray, brush with mustard, season, and grill for 2-3 minutes. Turn and grill another minute until cooked.
STEP 4
Whisk English mustard, white wine vinegar, rapeseed oil, and lemon juice in a bowl for the dressing. Season and mix in the lettuce leaves.
STEP 5
Serve mackerel with potatoes and salad.
