Green Salad with Sesame-Ginger Vinaigrette
Ingredients
2 tbsp
rice vinegar
1 1/2 tsp
finely minced fresh ginger
1 tbsp
coconut aminos or reduced-sodium wheat-free tamari
1/4 tsp
monk fruit extract
1 tbsp
Asian sesame oil
3 tbsp
Malaysian red palm fruit oil
3 tbsp
finely chopped green onions
1 tbsp
sesame seeds
1/8 tsp
sea salt
4 cups
fresh organic baby greens such as spinach or kale (about 6oz)

red bell pepper, chopped
Instructions
STEP 1
1 Combine the vinegar, ginger, tamari, and monk fruit extract in a small bowl.,
STEP 2
2 Whisk in the oils until well combined.,
STEP 3
3 Stir in the green onions, sesame seeds, and salt.,
STEP 4
4 Toss baby greens and red bell pepper in 1/4 cup dressing and serve.,
STEP 5
5 Remaining dressing can be stored, covered, in refrigerator for up to 1 week.
