Greek-Style Lemon Potatoes With Garlic and Oregano

Ingredients
3 pounds
baking potatoes, peeled and cut into cubes
½ cup
olive oil
4 cloves
garlic, minced
1½ teaspoons
dried oregano
1 teaspoon
salt
to taste
black pepper
½ cup
chicken stock
⅓ cup
lemon juice
2-3 tablespoons
fresh oregano, chopped
Instructions

Place the potatoes in a single layer in a 13-x-9-inch baking dish, pour the olive oil over them, add minced garlic, oregano, salt, and pepper, then toss well.

Bake for 15 minutes. Add chicken stock, toss, and bake for another 10 minutes. Add lemon juice, toss, and bake for an additional 10-15 minutes until cooked through.

If desired, broil the potatoes for 2-3 minutes for a golden brown finish.

Sprinkle with fresh oregano and serve immediately.
