Gluten-Free Sandwich Cookies with Dulce de Leche (Alfajores)
Ingredients
2.5 cups
cornstarch
1 cup
gluten-free all-purpose flour
2 teaspoons
baking powder
1/2 teaspoon
baking soda
1 cup
unsalted butter, softened
3/4 cup
white sugar
3
egg yolks
2 teaspoons
lemon zest
1/2 teaspoon
vanilla extract
1 jar (11.5 oz)
dulce de leche
1/2 cup
shredded coconut
Instructions
STEP 1
Preheat oven to 350°F. Line baking sheets.
STEP 2
Whisk cornstarch, flour, baking powder, and baking soda in a bowl.
STEP 3
Beat butter and sugar in a bowl until fluffy. Add egg yolks and mix.
STEP 4
Add lemon zest and vanilla extract. Fold in flour mixture until combined.
STEP 5
Wrap dough in plastic and refrigerate for 30-60 minutes.
STEP 6
Roll dough out to 1/4-inch, cut shapes, and place on baking sheets.
STEP 7
Bake until set but not browned, 7-10 minutes. Cool on wire racks.
STEP 8
Spread filling of dulce de leche onto one cookie and sandwich with another.
STEP 9
Roll sides in shredded coconut. Repeat for remaining cookies.
