Gluten-Free Applesauce Snack Cake

1/2 teaspoon plus pinch
Ground Cinnamon
1/4 teaspoon
Ground Nutmeg
1/8 teaspoon
Ground Cloves
4 tablespoons
Unsalted Butter, melted and cooled
3/4 cup
Unsweetened Applesauce
1 teaspoon
Vanilla Extract
Instructions
STEP 1
Adjust oven rack to middle position and heat oven to 325 degrees. Grease an 8-inch square cake pan and line the bottom with parchment paper.
STEP 2
In a bowl, whisk together flour blend, baking powder, baking soda, and xanthan gum.
STEP 3
In a large bowl, whisk eggs, granulated sugar, brown sugar, salt, 1/2 teaspoon cinnamon, nutmeg, and cloves until well combined. Whisk in melted butter.
STEP 4
Stir in applesauce and vanilla extract. Then mix in flour blend until smooth.
STEP 5
Pour batter into prepared pan. Bake for 30 to 35 minutes, until a toothpick comes out clean, rotating pan halfway through.
STEP 6
Mix remaining sugar with a pinch of cinnamon and sprinkle over warm cake. Cool completely in pan on a wire rack for about 2 hours.
