Fresh Pumpkin Pie
Ingredients
1 medium
sugar pumpkin
1 tablespoon
vegetable oil
1 teaspoon
salt
1/2 teaspoon
ground ginger
1/2 teaspoon
ground cinnamon

eggs
1 cup
honey
1/2 cup
milk
1/2 cup
heavy whipping cream
1 recipe
pastry for a 9 inch pie
Instructions
STEP 1
Preheat the oven to 325°F. Line a jelly roll pan with foil; lightly oil foil.
STEP 2
Cut pumpkin in half; remove seeds. Lightly oil the cut surface; place cut-sides down on the pan.
STEP 3
Bake until the flesh is fork-tender, about 45 minutes. Cool until just warm.
STEP 4
Increase oven temperature to 400°F.
STEP 5
Scrape out pumpkin flesh; mash in a bowl or purée in a blender.
STEP 6
Place pie dough into a pie plate; flute edges.
STEP 7
Combine 2 cups pumpkin purée, salt, ginger, and cinnamon in a bowl. Beat in eggs, honey, milk, and cream. Pour filling into pie shell.
STEP 8
Bake until a knife inserted comes out clean, about 50 to 55 minutes. Cool on a wire rack.
