Fettuccine With Asparagus and Smoked Salmon

fresh asparagus

minced shallots
1 cup
heavy cream
4 ounces
smoked salmon
1 teaspoon
fresh lemon juice
9 to 10 ounces
fresh fettuccine
2 tablespoons
minced fresh dill

Instructions
STEP 1
Snap off asparagus ends and peel stalks.
STEP 2
Cut the asparagus into one-inch pieces and steam until bright green.
STEP 3
Rinse asparagus under cold water and set aside.
STEP 4
Boil salted water for pasta.
STEP 5
Melt butter in a skillet and sauté shallots until soft.
STEP 6
Stir in heavy cream and simmer for five minutes.
STEP 7
Cut salmon into slivers and add to the cream; season with pepper and lemon juice.
STEP 8
Cook fettuccine for 2-3 minutes and drain.
STEP 9
Reheat sauce briefly, combine with fettuccine, and top with dill before serving.
