Instructions
STEP 1
Preheat oven to 325 degrees F.
STEP 2
Spray sheets with cooking spray and cover with parchment paper.
STEP 3
Heat ground ginger in a skillet for 1 minute.
STEP 4
Combine flour, ginger, baking soda, and salt in a bowl.
STEP 5
Beat butter and brown sugar until fluffy, about 2 minutes.
STEP 6
Mix in fresh ginger and vanilla until incorporated.
STEP 7
Gradually add flour mixture and milk in alternating batches.
STEP 8
Spread ¾ cup batter on each sheet evenly.
STEP 9
Bake for 16 to 20 minutes until golden brown.

Score cookies into rectangles before cooling.
