Everyday Cocoa Cake
Ingredients
2 cups
all-purpose flour
¾ cup
unsweetened cocoa powder
1¼ tsp
baking soda
¾ tsp
kosher salt
¾ cup
unsalted butter, softened
1¾ cups
light brown sugar
2 large
eggs
1 tsp
vanilla extract
to dust
powdered sugar
for serving
sweetened whipped cream
Instructions
STEP 1
Place rack in center of oven; preheat oven to 350°F.
STEP 2
Butter a 9" round cake pan with at least 2" sides and dust with cocoa powder. Knock out excess.
STEP 3
Whisk flour, cocoa powder, baking soda, and salt in a bowl to combine.
STEP 4
Beat softened butter and brown sugar in a large bowl until pale and fluffy.
STEP 5
Add eggs one at a time, beating well after each addition. Beat in vanilla extract.
STEP 6
Add one-third of the flour mixture and beat until a few dry streaks remain.
STEP 7
Beat in water until fully incorporated, repeat with remaining flour and water.
STEP 8
Pour cake batter into prepared pan and bake for 50 minutes to 1 hour.
STEP 9
Cool in pan for 1 hour, then invert onto a wire rack and dust with powdered sugar. Serve with whipped cream and berries if desired.
