Easy and Quick Shrimp Tacos
Ingredients
2 tablespoons
diced onion
2 tablespoons
carrot matchsticks
1 tablespoon
chopped fresh cilantro
1/4 teaspoon
chili powder
1/4 teaspoon
ground cumin
1 pinch
cayenne pepper
8 uncooked
medium shrimp, peeled and deveined
1 tablespoon
olive oil
2
corn tortillas
1/2 cup
shredded cabbage
1/2 cup
Caesar salad dressing
Instructions
STEP 1
Combine onion, carrots, and cilantro in a bowl.
STEP 2
Whisk chili powder, cumin, and cayenne pepper. Add shrimp; toss to coat.
STEP 3
Heat olive oil in a skillet. Add shrimp; cook until pink, about 4 minutes total.
STEP 4
Wrap tortillas in damp paper towels; microwave until warm.
STEP 5
Divide shrimp between tortillas. Top with cabbage, onion mixture, and dressing.
