Easy Italian Sausage and Rigatoni
Ingredients
8 ounces
rigatoni pasta
1 pound
bulk Italian sausage
1/4 cup
diced onion
4 cups
spaghetti sauce
2 cups
cottage cheese
2 cups
mozzarella cheese
1/4 cup
grated Parmesan cheese
2 large
eggs
1 tablespoon
dried parsley
1/2 teaspoon
Italian seasoning
1/2 teaspoon
dried basil
to taste
salt
to taste
ground black pepper
Instructions
STEP 1
Preheat oven to 350°F. Grease baking dish.
STEP 2
Boil salted water. Cook rigatoni for 12 minutes. Drain.
STEP 3
In a skillet, cook sausage and onion until browned, about 7 minutes.
STEP 4
Mix spaghetti sauce, cottage cheese, 1 cup mozzarella, Parmesan, eggs, parsley, seasoning, basil, salt, and pepper in a bowl. Add sausage mixture and rigatoni; stir gently.
STEP 5
Transfer to baking dish; cover with foil and bake for 45 minutes. Remove foil, top with remaining mozzarella, and bake until melted, about 15 minutes.
