Easy Chicken Fajitas

flour tortillas

chicken breasts, cut into strips

garlic cloves, finely chopped

ground cumin
1 tsp
chilli powder

lime, juice only
2 tbsp
olive oil

red onion, thinly sliced
2
peppers, thinly sliced
salt and freshly ground black pepper

avocado, peeled and mashed

shredded iceberg lettuce
handful
fresh coriander, leaves picked
salsa, shop-bought or homemade

Instructions
STEP 1
Heat the oven to 120C/100C Fan/Gas ½. Wrap the tortillas in kitchen foil, place on a baking tray and warm in the oven until ready.
STEP 2
In a bowl, combine the chicken, garlic, cumin, chilli powder and lime juice. Season with salt and pepper and toss.
STEP 3
Heat 1 tablespoon of oil in a frying pan over high heat. Add the chicken and cook for 5 minutes until golden and cooked through.
STEP 4
Add the remaining oil, onion, and peppers. Fry for 5 minutes until soft and slightly charred.
STEP 5
Assemble the fajitas by placing the chicken and veggie mix onto warmed tortillas and top with chosen toppings.
