Dutch Crunch Rolls
Ingredients
3 1/2 cups
all-purpose flour
1 1/4 cups
warm water
3 tablespoons
unsalted butter
4 teaspoons
sugar
2 1/4 teaspoons
instant yeast
1 teaspoon
salt
1/2 cup plus 2 tablespoons
warm water
3/4 cup
white rice flour
2 tablespoons
vegetable oil
2 tablespoons
sugar
2 1/4 teaspoons
instant yeast
1/2 teaspoon
salt
Instructions
STEP 1
Prepare the dough by mixing all ingredients until cohesive.
STEP 2
Knead the dough until smooth and elastic, about 5-7 minutes.
STEP 3
Let rise until almost doubled, around 1 to 1.5 hours.
STEP 4
Divide dough into 8 pieces and shape into balls.
STEP 5
Roll each ball flat, fold and seal. Let rise again for 45 minutes.
STEP 6
For the topping, mix ingredients and let rise for 20 minutes.
STEP 7
Apply topping to rolls and bake at 400°F for 22-25 minutes.
