Creamy Mushroom Orzo
Ingredients

onion
2 cloves
garlic
1 cup
dried porcini mushrooms
2 cups
fresh mushrooms
1 cup
orzo
1 can
coconut milk
2 cups
vegetable stock
to taste
salt
to taste
pepper
Instructions
STEP 1
In a large saucepan, heat a splash of water over medium heat and add the chopped onion and garlic. Cook for 5 minutes until softened.,
STEP 2
Add the dried porcini mushrooms and fresh mushrooms, cooking for another 5 minutes until they start to brown.,
STEP 3
Stir in the orzo and cook for 1 minute, then add the coconut milk and vegetable stock.,
STEP 4
Bring to a simmer and cook for 10-12 minutes, stirring occasionally, until the orzo is cooked and creamy.,
STEP 5
Season with salt and pepper, and serve hot.
