Creamy Double-Garlic Mashed Potatoes

Instructions
STEP 1
Bring a large pot of water to a boil over high. Heat the oven to 400 degrees.
STEP 2
Prepare the roasted garlic: Cut the top 1/4 off each garlic head. Drizzle with oil, seal in foil, and roast until softened, 40 minutes to 1 hour. Set aside to cool.
STEP 3
Prepare garlic chips: Heat oil in a frying pan over medium-high. Fry sliced garlic until golden, about 30 seconds to 1 minute. Transfer to paper towels and season with salt.
STEP 4
Prepare boiled potatoes: Boil salted water, peel and dice potatoes, and boil until soft, 13 to 15 minutes. Drain.
STEP 5
Prepare herbed cream: Boil cream, bay leaves, rosemary, and thyme for about 5 minutes. Strain and return to the pan, season, and cover.
STEP 6
Return potatoes to the pot with cream and butter. Squeeze roasted garlic into the mixture and mash until creamy. Season to taste.
STEP 7
Serve in a bowl, adding butter, herbs, and garlic chips on top.
