Cranberry Quinoa Stuffed Sweet Potatoes

Sweet Potatoes

Quinoa
1/2 cup
Cranberries
1 tsp
Salt

Instructions

Pierce the sweet potatoes with a fork and bake for 45-60 minutes until tender.

While the potatoes are baking, cook the quinoa according to package instructions.

In a bowl, mix the cooked quinoa with cranberries, salt, and pepper.

Once the sweet potatoes are done, cut them in half and scoop out some of the flesh.

Mix the scooped sweet potato flesh with the quinoa mixture.

Stuff the quinoa mixture back into the sweet potato skins.

Return to the oven for an additional 10 minutes.

Serve warm.
