Cranberry Apple Stuffed Pork Loin

chicken flavored dry stuffing mix
1/2 cup
water
1 cup
chopped apple
1/3 cup
dried cranberries
1/3 cup
chopped toasted pecans
1/4 cup
finely chopped onion
1 (3 pound)
boneless pork loin roast
to taste
salt and black pepper
Instructions

Combine stuffing mix and water in a mixing bowl. Stir in apple, cranberries, pecans, and onion; set aside.

Trim fat from pork loin. Cut it open from one side, then pound to 1/2-inch thickness.

Season pork loin with salt and pepper. Spread stuffing mixture onto the pork and roll it up. Secure with twine.

Bake for 1 hour until no longer pink in center. Rest for 10 minutes before slicing.
