Country Ham and Biscuits

1/4 cup
shortening
3 cups
flour
1 Tbsp.
sugar
1 Tbsp.
baking powder
1/2 tsp.
salt
1/2 tsp.
cream of tartar
1/2 cup
cold butter
1 1/4 cups
buttermilk
1 tsp.
bacon grease
3 slices
country ham
to taste
softened butter
Instructions
STEP 1
Preheat oven to 425°F. Grease skillet.
STEP 2
In a bowl, sift flour, sugar, baking powder, salt, cream of tartar.
STEP 3
Cut butter and shortening into flour mixture until crumbly.
STEP 4
Add buttermilk and stir gently; avoid overmixing.
STEP 5
Turn dough onto floured surface; pat to 2-inch thickness.
STEP 6
Cut out 6-8 biscuits and transfer to skillet. Bake for 30 minutes.
STEP 7
Cook ham in bacon grease until browned. Drain on paper towels. Cut in half.
STEP 8
Serve biscuits with butter and ham inside.
