Coconut Curry Ramen

Instructions
STEP 1
Boil water and cook ramen noodles.
STEP 2
Sauté carrots in sesame oil.
STEP 3
Stir-fry red pepper, mushrooms, and bok choy.
STEP 4
Cook onion, ginger, garlic, and curry paste.
STEP 5
Add coconut milk and broth, simmer.
STEP 6
Serve noodles with veggies and eggs.
