Classic Spicy Southern Fried Chicken

Chicken, cut into 8 pieces

Buttermilk

Hot sauce

Kosher salt, divided

Black pepper

All-purpose flour
1 tablespoon
Onion powder
1 teaspoon
Garlic powder
1 teaspoon
Paprika
1 teaspoon
Dried oregano
1 teaspoon
Cayenne pepper
Instructions
STEP 1
Combine chicken, buttermilk, eggs, hot sauce, 1 tbsp salt, and 1 tbsp pepper. Cover and refrigerate for at least 20 minutes.
STEP 2
Mix flour, remaining salt, pepper, onion powder, garlic powder, paprika, oregano, and cayenne. Whisk together.
STEP 3
Remove chicken from fridge. Dredge each piece in flour, pressing to coat. Place on a wire rack when done.
STEP 4
Pour oil into Dutch oven to 1 inch depth. Heat to 350°F (175°C). Prepare a wire rack over a paper towel-lined sheet.
STEP 5
Fry chicken until golden and cooked through, about 10 to 15 minutes. Maintain oil temperature. Return to wire rack before serving.
