Chilean Sea Bass Over GF Orzo, Swiss Chard, and Tomato Salad

Ingredients
1/4 cup
gluten-free orzo (I like Jovial® Organic Grain-Free Cassava Orzo)
4 cups
swiss chard
3 1/2 tbsp
extra-virgin olive oil, divided
1 cup
cherry tomatoes
1 oz.
red onion, sliced
1/4 cup
basil leaves, chopped
1 tbsp
fresh parsley, chopped
1/4 cup
pumpkin seeds
2 tbsp
apple cider vinegar
1 clove
garlic, minced
1 1/2 tsp
sea salt, divided
1 tsp
garlic powder

Instructions

2 Wash and cut swiss chard into shreds and sauté with ½ tbsp of olive oil for 3 minutes. Set aside.

3 Place in a bowl with cherry tomatoes, basil, red onions, parsley, pumpkin seeds, 2 tbsp olive oil, apple cider vinegar, minced garlic, and ½ tsp salt. Toss ingredients together and place in the refrigerator.

4 Sprinkle garlic powder and remaining salt over sea bass.

5 Place remaining olive oil in sauté pan on medium heat.

6 Place sea bass in the pan. Sear for 10 to 15 minutes on each side or cooked all the way through. Sea bass should be firm to the touch and golden brown on both sides.

7 Take orzo salad out of the refrigerator and add swiss chard. Mix and spoon salad onto a plate. Top with sea bass and serve.
