Chicken traybake with chorizo, tomato and red peppers

cannellini beans
4 cloves
garlic
2 sprigs
rosemary

olive oil
1 tsp
sea salt
to taste
black pepper
Instructions
STEP 1
Preheat the oven to 200C/180C Fan/Gas 6.
STEP 2
In a large roasting tin, combine onions, peppers, tomatoes, chorizo, beans, garlic, and rosemary.
STEP 3
Top with chicken, then drizzle with olive oil.
STEP 4
Season with sea salt and black pepper. Roast for 1 hour, until chicken is cooked and golden.
STEP 5
Check doneness by piercing chicken; juices should run clear.
STEP 6
Let chicken rest for 10 minutes, then serve with vegetables.
