Chicken Salad Lettuce Boats

cooked chicken, diced
1 cup
mayonnaise
3 tablespoons
capers
1/2 cup
celery, diced
1 cup
red or green seedless grapes, sliced in quarters
1 tablespoon
dill
to taste
salt and pepper
as needed
baby romaine lettuce
1-2
carrots, shredded
Instructions
STEP 1
Use either a pre-roasted chicken and cut it up OR bake two chicken breasts and thighs each. Dice them up.,
STEP 2
Mix all other ingredients (mayonnaise, capers, celery, grapes, dill, salt, and pepper) with the diced chicken.,
STEP 3
Scoop the mixture into baby romaine lettuce leaves.,
STEP 4
Top with shredded carrots.,
STEP 5
For best flavor, prepare a few hours before serving.
