Chicken Florentine Casserole

skinless, boneless chicken breasts
1/4 cup
butter
3 teaspoons
minced garlic
1 tablespoon
lemon juice
1 (10.75 ounce)
can cream of mushroom soup
1 tablespoon
Italian seasoning
1/2 cup
half-and-half
1/2 cup
grated Parmesan cheese
2 (13.5 ounce)
cans spinach, drained
4 ounces
fresh mushrooms, sliced
2/3 cup
bacon bits
2 cups
shredded mozzarella cheese
Instructions
STEP 1
Preheat oven to 350°F. Bake chicken until no longer pink, 20-30 minutes. Remove and set aside.
STEP 2
Increase oven temperature to 400°F.
STEP 3
Melt butter in a saucepan over medium heat. Stir in garlic, lemon juice, soup, Italian seasoning, half-and-half, and Parmesan.
STEP 4
In a baking dish, layer spinach, then mushrooms. Pour half of the sauce over mushrooms. Place chicken and cover with remaining sauce. Add bacon bits and mozzarella on top.
STEP 5
Bake until bubbly and browned, 20-25 minutes.
