Cheeseburger Soup

Ingredients

ground beef
4 tablespoons
butter, divided
3/4 cup
chopped onion

shredded carrots

dried basil

1 3/4 pounds
cubed peeled potatoes
3 cups
chicken broth
1/4 cup
all-purpose flour
8 to 16 ounces
Velveeta, cubed
1 1/2 cups
whole milk
3/4 teaspoon
salt
1/4 to 1/2 teaspoon
pepper
1/4 cup
sour cream

Instructions

Sauté onion, carrots, celery, basil, and parsley with butter until tender.

Add potatoes, broth, and cooked beef. Boil, then simmer until potatoes are tender.

Prepare the roux: melt butter and stir in flour until bubbly.

Thicken soup by adding roux. Boil and stir for 2 minutes.

Reduce heat and stir in cheese, milk, salt, and pepper until cheese melts.

Finish with sour cream. Serve with optional onion rings and green onions.
