Cheater's Mac and Cheese

Ingredients
4 ounces
penne
1 1/2 cups
broccoli florets
1 tbsp
unsalted butter
2 1/2 ounces
cream cheese
1/2 ounce
Parmigiano-Reggiano, finely grated
to taste
kosher salt
to taste
freshly ground black pepper
Instructions
STEP 1
Bring a large pot of salted water to a boil. Add the penne and cook according to package instructions until al dente, about 10-12 minutes.
STEP 2
In the last 3 minutes of cooking, add the broccoli florets to the pot with the pasta.
STEP 3
Drain the pasta and broccoli, reserving about 1/2 cup of the cooking water.
STEP 4
Return the drained pasta and broccoli to the pot. Add the butter and cream cheese, stirring until melted and combined.
STEP 5
If the mixture is too thick, gradually add reserved pasta water until desired consistency is reached.
STEP 6
Stir in the grated Parmigiano-Reggiano, and season with kosher salt and freshly ground black pepper to taste.
STEP 7
Serve immediately, garnished with additional cheese if desired.
