Charcoal-Grilled Tuna Steaks with Provençal Vinaigrette
Ingredients
vegetable oil
1 wad for cooking grate
red wine vinegar
3 tablespoons plus 1 teaspoon
table salt
1/2 teaspoon
Dijon mustard
2 tablespoons
honey
2 teaspoons
chopped fresh thyme
2 tablespoons
chopped pitted oil-cured black olives
1/4 cup
minced fresh parsley leaves
2 tablespoons
minced fresh oregano
1 tablespoon
minced anchovies
2
minced garlic
1 clove
olive oil
3/4 cup
tuna steaks
6 (1 inch thick, about 8 ounces each)
ground black pepper
to taste
Instructions
STEP 1
Light chimney starter with charcoal, allow to burn until ready, about 20 minutes.
STEP 2
Whisk vinegar, salt, mustard, honey, olives, parsley, oregano, anchovies, garlic in a bowl. Drizzle oil into mixture until emulsified.
STEP 3
Brush tuna with vinaigrette, season with salt and pepper. Grill without moving until cooked to preferred doneness, about 1½ minutes per side for rare.
