Caramelised Shallot & Squash Filo Swirl

Shallots
1 cup
Diced Squash
1 cup
Spinach
1 teaspoon
Chilli Flakes
1 teaspoon
Fresh Rosemary

Filo Pastry
2 tablespoons
Oil
Instructions
STEP 1
Preheat the oven to 200°C (390°F).,
STEP 2
In a pan, heat some oil and add sliced shallots, cooking until caramelised.,
STEP 3
Add diced squash and cook until tender, then stir in spinach, chilli flakes, and rosemary.,
STEP 4
Lay out filo pastry sheets and brush with oil, layering them on top of each other.,
STEP 5
Spoon the filling along one edge of the pastry and roll it up tightly.,
STEP 6
Place the roll on a baking tray and brush with more oil.,
STEP 7
Bake for 25-30 minutes until golden and crispy.
