Instructions

In a pan, heat some oil and add sliced shallots, cooking until caramelised.

Add diced squash and cook until tender, then stir in spinach, chilli flakes, and rosemary.

Lay out filo pastry sheets and brush with oil, layering them on top of each other.

Spoon the filling along one edge of the pastry and roll it up tightly.

Place the roll on a baking tray and brush with more oil.

Bake for 25-30 minutes until golden and crispy.
